Sauce Alla Norma



This wonderfully simple sauce comes from Sicily and is fill of Sicilian tradition! It is a triumph of Mediterranean flavours and the dish was named in honour of Bellini’s opera “Norma”. The story goes that in the 19th century, Nino Martoglio, a Sicilian writer, poet and theatre director, was so impressed when he first tasted the dish that he compared it to “Norma”, Bellini’s masterpiece…and the name has stuck ever since!


Tomatoes, aubergines, red pepper, chilli, red wine vinegar, basil, oregano, black pepper, salt, sugar.

Per 100g:

Energy 770kJ/182kcal, Fat 0g, of which saturates 0g, Carbohydrate 25g, of which sugars 10g, Protein 1.5g.

Old Sicilian recipe, great over past with salted ricotta or feta.
